Dad's Dressing

My dad used to make this dressing about once a week, so growing up, we instinctively called it "Dad's Dressing." It's a dream for garlic lovers and a staple in the fridge. We've had neighbors and family begging for the recipe because it's that good.

Yield: 1 cup
Time: 5-10 minutes  

Ingredients 

  • 6 Garlic Cloves

  • 1⁄4 Cup White Wine Vinegar

  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Dijon
  • 3 Dashes of Tabasco
  • Scant 1 Tablespoon Honey
  • 1⁄8 Teaspoon Freshly Ground Black Pepper
  • 1⁄2 Teaspoon Salt
  • 3⁄4 Cup Good Olive Oil
  • 1 Tablespoon of the oil from giardiniera (optional)
  • (you can add an egg yolk to create a thicker dressing, if desired)

Instructions 

  • In a blender, blend everything but the olive oil.
  • On a slow speed, slowly drizzle in the olive oil.
  • Add about 1 Tablespoon of the oil from giardiniera, if you like extra spicy.

    Recipe Notes: 

    Use as a salad dressing. My favorite way to have this dressing is over greens with Parmesan cheese chunks and homemade croutons.
