Parmesan Apple Cider Vinegar Dressing
My husband and I make this dressing often because it’s the perfect balance of acid, salt and fat. And because the ingredients are basic pantry staples.

Ingredients

3 Tablespoons Apple Cider Vinegar

1⁄4 Cup Olive Oil (add more if desired)

1 Tablespoon Dijon

1⁄2 Teaspoon Salt

1⁄8 Teaspoon Freshly Ground Black Pepper

3 Tablespoons Finely Grated Parmesan Cheese (use a microplane)
Instructions

Grate parmesan on a microplane or zester to create fine shavings. Set aside. I’ve found the finer the parmesan the more it gets throughout the dressing and adds more flavor in each bite. It thickens the dressing as well and helps it stick to whatever you place it on.
- Whisk together apple cider vinegar, dijon, salt, and ground pepper. Slowly whisk in olive oil.
- Fold in grated parmesan.
Recipe Notes:
Spoon over roasted brussel sprouts with bacon. Pour over a kale salad. Spoon over hot roasted potatoes/home fries.
