Toasted Honey Vanilla Granola
Making this simple granola has become a Sunday tradition. I needed something easy to make that I could serve over my yogurt in the morning throughout the week. Granola can be incredible with a few star ingredients: olive oil, lemon juice and salt.

Time: 40 minutes
Ingredients
- 1/4 Cup Olive Oil
- 1/4 Cup Honey
- 1/4 Cup Maple Syrup
- 1/2 Lemon, Juiced (About 1 Tablespoon)
- Sprinkle of Salt
- 1 Teaspoon Vanilla Bean Paste or 2 Teaspoons Pure Vanilla Extract
- 3 Cups Old Fashioned Oats
Instructions
- Pre-Heat oven to 300 Fahrenheit.
- In a large bowl whisk together olive oil, honey, maple syrup, lemon juice, salt, and vanilla until homogenous. Fold in oats. (If you measure the olive oil first and then the honey, the oil will help the honey from sticking to your measuring cup.)
- Spread mixture onto a parchment lined sheet pan.
- Bake for 30-35 minutes. Stirring every 5-10 minutes. Be sure to stir, otherwise your granola will burn around the edges. Bake until golden and fragrant. Allow granola to cool to room temperature and store in an airtight container.
Recipe Notes:
Serve over yogurt or eat as a cereal. You can mix in dried fruit, nuts, etc.
